The Municipal Designation of Origin (Denominazione Comunale di Origine) is a CERTIFICATE

of TYPICALITY.

A dish, a product, or a processing method can be considered typical, so recognizing its

quality and territorial identity. This is quite different from the Protected Geographical

Indication (PGI) of a cultivation such as Vialone Nano PGI rice, but it can be associated with it.

There are five “De.Co” (Municipal Typicality Designations) in Isola della Scala:

• Pilaf cooking alla Isolana,
• Risotto all’Isolana,
• Lasagna with duck (Anara),
• Bigoli pasta with sardines,
• Risotto with asparagus.
